From Father to Son: A Legacy of Flavor
My father was a chef who cooked for the grand hotels of Zihuatanejo, Guerrero. From the age of five, he began teaching me the art of Mexican cooking, instilling in me a profound love for the culinary craft.
I believe cooking is like life itself—something you must love deeply and approach with an open heart. Every day brings new lessons, new techniques, and new ways to express the authentic flavors of our heritage.
For me, the kitchen is a sacred space where tradition meets innovation. It's where I can honor my roots while creating dishes that speak to both the past and the present.

Birria originated in Jalisco as a celebration dish, traditionally made with goat meat marinated in a complex blend of dried chiles and spices.
Our version honors this heritage while embracing modern preferences, using carefully selected beef that's braised until fork-tender in a deeply flavorful consomé.
